Why do we use subdivision instead of just sampling the original geometry in higher detail in the first place?

I think one use case of subdivision is that artists can just model a rough low polygon mesh, and then let the computer to make surfaces smoother with procedures. Human is good at high level description but not tiny details, so it could save lots of time.
